This has become a firm family favourite, after we had an amazing holiday in america and tried orange chicken for the first time in Safeways of all places. As soon as we got home i started trying out different recipes till i came up with this one. we all love it and it has become a saturday night treat. Hope you love it as much as we do.
Makes enough for 4 to 5 people
The chicken
I use about 1 chicken breast per person
about 750gr of raw chicken
2 large garlic cloves
the zest of 1 orange
3 tbs of soya sauce
about an inch of grated ginger
4 tbs corn flour
For the sauce
8 tbs spoons of any cheap marmalade
1 tsp salt
1 inch of grated ginger
2 grated cloves of garlic
1 orange the zest and juice also add the juice of the orange you grated for the chicken.
1 tbs of sweet chili sauce
3 tbs of soya sauce
2 tbs of corn flour mixed with a bit of water
Now to begin
First cut the chicken into large chunks and put in a bowl, add the grated ginger and garlic with the grated orange zest. give it a mix then add the soya sauce. leave it to marinade for about 1 hour in the fridge. when ready pour in the corn flour and make sure it has coated the chicken, then time to fry if you have a deep fat fryer perfect but if not like me fill a deep wok with normal oil e.g sunflower or rapeseed about just under half way. Heat it up you will know when it is ready if you put in a cube of bread and it bubbles. start frying the chicken in batches till it is brown and crispy take out and leave to drain on some kitchen paper.
Next for the sauce in a saucepan add the all the sauce ingredients but leave out the corn flour. Let it all melt then cook for about 10 mins on a low heat. Taste it, it should have an orange taste with a hint of ginger and garlic if you think it needs more salt add some more soya sauce. after the 10 mins add the cornflour mix and cook again till you have a thicker sauce if it becomes to think add a bit of water.
now you are ready put the chicken on a serving dish and pour over the sauce you can grate a bit of extra orange zest over the top. I serve it with plain rice and soya sesame vegetables but goes really well with noodles. Really hope you enjoy it.
