Black Bean, Kale and Beetroot Taco

Taco is one the things my girls love and i always try and come up with a bit more of healthier option than just the normal. This recipe came about by looking in all the fridge and drawers of my kitchen at home. They loved it but my husband was not to impressed with the absence of meat.!!

Makes enough for 4 people.

1 Small box of black beans

1 Peeled Beetroot grated

2 Handfuls of washed and cut kale

1 tsps of taco seasoning

8 Corn tortillas

2 chopped tomatoes

2 handfuls chopped lettuce

2 grated carrots

1 avocado chopped with a sprinkle of lime juice

Taco sauce 

In a large frying pan cook the beetroot in a bit oil and fry till a bit soft then add the kale and black beans cook till the kale is cooked the add the taco powder and a few drops of water. cook for another couple of minutes the set to one side.

now for the rest, grate the carrots and put in a bowl. shred the lettuce and put in a bowl, do the same with the tomatoes and avocado. now you are ready to eat. you can now build your taco using the tortilla as a base, i am useless at rolling them up so make a sort of pizza. hope you like it!!
