I am on a bit of a veggie drive, trying to get my family to eat more vegetables. this is something i made up, it had a mixed response my youngest was not a fan but the rest were fine with it. i loved it but i prefer vegetables over fruit any day.
2 courgettes
1 tin chickpeas drained
1 330gr tin or carton of ready lentils drained
1 red pepper
1 198 gr small tin sweetcorn
2 tablespoons tahini paste
1 lemon zest and juice
1 teaspoon pizza herbs
salt and pepper to taste.
in a large frying pan with one tablespoon of oil fry the sliced courgettes till a bit soft then add the sliced red pepper and cook for about another 3 mins. next add the zest of the lemon and juice. then add the drained chickpeas, lentils and corn. also the herbs and salt and pepper cook again for 2 more minutes. Add the tahini paste and make sure it is all mixed in if it gets a little sticky add a few tablespoons of water. heat through and now it is ready. we had it with flour tortillas and a few plain taco chips. my girls love cheese so they had cheese as well.
