This a great autumn soup, it uses what is in season and is great on a cold day served with bread or croutons. I find that any soup i make that uses potatoes as a base is a bit heavy and is perfect for autumn and winter. This soup is one of my favourites.
Serves 6
450gr washed and chopped leeks
550gr peeled and chopped potatoes
2 sticks of washed celery
2tbs sunflower oil
2lt chicken or vegetable stock
salt and pepper

5kg washed and chopped leeks
5kg peeled and chopped potatoes
2 heads of celery, washed
1dl sunflower oil
20lt chicken or vegetable stock
salt and pepper
In a Large pan warm up the oil and add the washed and chopped leeks, cook the leeks until soft. Add the chopped and washed celery and cook for about 3 minutes and the add the potatoes. Add the stock and cook untill the potatoes are soft. Blend the soup till smooth, taste and add salt or pepper if you think it needs it.
Serve hot with bread or croutons on the side. Enjoy.
