Testing Recipes

I have been cooking for children for over 18 years, first with my own two daughters and then as i cook in a kindergarten. I have a few firm favourites  that the children love but i try to experiment with different textures and flavours. If you could try the recipes and give me feedback on if your children liked it, how easy or difficult you found it to make. Also if there was anything you thought could be improved all feedback welcome.

This recipe is one the childrens favourite at kindergarten. The first time i made it none of them ate it they were very sceptical of it. It took 3 attempts and then it became the firm favourite. i add sweetcorn and peas sometime but mostly just sweetcorn. i serve it with a salad and some chopped vegetables.

recipe serves 4 to 5 people

50 gr    butter

50 gr    plain flour

500ml  full fat milk

150gr   grated cheese

1 tsp    dijon mustard

2 tins   140 gr of tuna in oil or water

half a chicken stock cube ( low salt)

500gr   pasta any sort

salt and pepper

75gr of both peas and sweetcorn (optional)

in a sauce pan melt the butter then add the flour, cook until it looks like rough breadcrumbs. slowly add the mild and mix till all the milk is added and you have a lump free sauce. cook on a low heat and stir till you have a sauce that coats the back of the spoon. ( tip, dip the spoon in the sauce, turn it over the run your finger down the middle of the spoon if it leaves a track in the sauce it is ready.

add the cheese, mustard and stock cube. keep on stirring till the cheese is melted and the stock cube is dissolved. drain the tins of tuna and add to the sauce. you can add sweetcorn or peas at this stage if you like.

cook the pasta in boiling water till done, serve the pasta with the sauce you can also make a pasta bake if you like  just add the sauce to the pasta put in a baking dish cover in grated cheese and bake in a preheated oven of 190oc for about 20 mins or when the top is golden and bubbly.
