Cauliflower soup is a norwegian favourite the children at the barnehage really like it. The soup i make is with the whole cauliflower i use the leaves as well and add potatos. so the soup is not pure white and white with green flecks in. quick to make and filling.

Makes enough for 6 people

1           large cauliflower 

4           Stalks of celery

1            onion chopped

400 gr   peeled potatos

2.5 lt     chicken or vegetable stock

In a large saucepan fry the cnion and celery in a little oil until soft. Add the chopped potatos and 1 litre of stock. cook for about 10 minutes then add the chopped cauliflower and the rest of the stock. Cook until all the vegetables are soft the blend till you have a smooth soup with no large lumps in. Taste and add salt if you think it needs it.

Serve with bread or croutons. you can also sprinkle over the soup crispy onions they go really well with it, enjoy.
