Chicken Chilli

This dish is great for kids and adults, when i make it at home i do not really add much chilli powder because i'm not a huge fan of very hot food but my husband loves it so he adds it himself at the table. You can also have rice with the chilli but i fnd that just cornbread and a few goodies to go on top work best. children love to choose their own things.  At barnehage what worked well was grated cheese, chopped tomatoes, chopped peppers (paprika) sour cream and taco sauce. Also sometimes taco chips!!

For the chilli enough for 4 - 5 people

400 gr chicken mince

1 onion

2 cloves of garlic

2 carrots

2 large handfuls of frozen peas

1 small can of tomato puree

1 jar of pasta sauce i use the one with extra garlic

1 small can of sweetcorn

1 small can of kidney beans

50 ml of water with a chicken stock cube

2 teaspoons of taco herb mix

3 large handfuls of fresh spinach

a small pinch of chilli powder

salt and pepper

In a large frying pan fry the onion and meat till they are brown in a small amount of oil. then add the chopped garlic. Now add the tomato puree and sauce give a good mix add a small amount of water to the glass jar and give it a good mix then pour over the meat mixture. now for the vegetables peel and slice the carrots into thin slices, and add the peas, sweetcorn and kidney beans. also all the herbs and spices. give it all a good mix and then add the water, stock cube and salt and pepper. turn the heat to about 5 and let it all simmer for about 30 mins. check that it is not sticking. taste and see if you need to add salt or pepper now is the time to add the spinch, stir and then cook for another5 mins.

it should be ready now, serve with either cornbread or rice, or both and enjoy.
