Quinoa has been a revelation to me, i made it for the first time today and have been shocked by the reaction of the children. they love it, even my most picky child ate 3 portions!!!! i kept it very simple just add some vegetable stock to the water. I served it with some grated cheese i thought if the children had something they knew with it and loved, it would help them get used to it. it seemed to work.
180 gr quinoa
600ml boiling water
2 tbsp Vegetable stock powder
Pour the boiling water into a pan and add the quinoa and bring to the boil, let boil for about 2 mins and then turn the heat down to about a 4. Put a lid on the pan and and wait till all the water has been absorbed. then take a couple of sheets of kitchen roll place them on top of the pan and then cover with the lid. Leave for another 5 mins, when ready run a fork through the grains and you are ready to eat.
It is great in place of rice or pasta. Enjoy!
