I love cornbread, it is great with meat dishes such as chicken chili or just with butter and Jam. The recipe below is a bit different in that it has no sugar in it. That is just my preference so you can add sugar if you like. I really like it with the chili and some side dishes of grated cheese, chopped tomatos, sour cream, taco sauce and maybe some chopped avacado with a splash of lime juice.
Ingredients
190 gr cornmeal
64 gr plain flour
50 ml milk
3 tbsp oil or melted butter
1 egg
1.5 tsps salt
2 tsps baking powder
oven temp 190oC
in a large bowl mix add all the dry ingredients and in and give a good mix, then add in the milk and egg, mix till you have a smooth batter. Then in a greased cake tin or oven proof about 8 in will work. Put in the pre heated oven and will be ready in about 10 - 12 mins, same as the cakes it is ready when a knife comes out clean.
