Homemade Baguette

I have always wanted to try and make baguettes at home but never had the time and thought it would be to difficult to make. So this weekend i had a go, the ingredients are simple just 4 but it does take about 5 hours form start to finish. as i write this i am trying out this recipe for the 3rd time to get it just right. So here is the recipe with the best method so far if it changes i will update.

Ingredients

700 gr plain flour

1 teaspoon salt

1.5 teaspoons yeast

520 ml water

In a mixing bowl add all the ingredients and mix till you have a smooth a sticky dough. cover the bowl and leave for 30 mins, after 30 mins wet your hands do not take the dough out of the bowl but put your hands under the dough and lift one side up and fold it over the top do this four times and then cover the bowl again. you need to do this four times in total. i have writting it down on paper so i know when the next folding time is.

After the 4th time. take the dough out of the bowl and on a floured bench cut the dough into 4 pieces, each piece should weigh between 300 to 310gr. shape the dough into balls and leave covered by a teatowel for 15 mins. Now to shape the baguettes take a piece of dough and flatten it a little then start to roll in on its self till you have a sasauge shape, then roll out with you hands till you  have a baguette shape. 

Folding the dough after 30 minutes of raising.

have a clean teatowel ready dusted with flour, then lay the first baguette length ways on the towel and push the sides up the repeat with all four baguettes. you can see that in the video. now leave the baguettes to raise for 2 hours. After 2 hours carefully left the baguettes onto a floured baking tray, i use a folded teatowel and sort of lift them carefully onto the tray. score with a sharf knife.

Bake in a pre heated oven at 220oc. while the oven is heating put a tray of water at the bottom of the oven, this will give some steam in the oven which will give you a crispy crust. it will take about 15 mins till they are ready. they should be brown and crsipy. enjoy.
