I knew i wanted to serve cod fillets for lunch but i wanted to make them a little bit more interesting and as i was clearing away breakfast i had a look at the box of havrefras in my hands and though now here is something. So this is what came about. I added some Pizza herbs and the children loved it and have now started to call it Pizza Fish.
Serves 6
oven temp 190
6 Cod fillets, fresh or frozen
3 Large handfuls of Havrefras or any other oat breakfast cereal
2 tsps of dried Pizza herbs
1 large handful of grated cheese.
salt and pepper
In a food processor add the cereal, cheese and herbs whizz up until it looks like chucky breadcrumbs. Put the cod fillets on a baking tray and put a couple of spoofuls of the mix on top and press it down so the whole fish is covered. sprinkle over a little oil and bake in the oven till the fish is cooked and the top is golden brown and crispy.
Tastes great with rice or pasta and lots of veggies or a big salad, enjoy.
