Cauliflower Bread

The idea for this bread came about while i was making cauliflower cheese the other day. The cauliflowers arrived packed in plastic with perfect looking leaves and the vegetables had no marks on them, it seemed such a shame to through away the leaves and stalks. I like eating them both raw in salads or with just a bit of salt. So decided to save them and think of something to do with them and this is what i came up with. I whizzed up the leaves and stalks in a food processor till they looked like bread crumbs, then added them to the bread dough. Below is the recipe.

Makes 2 Loaves

500 gr    plain flour

300 gr    wholemeal flour

200 gr    whizzed up cauliflower leaves and stalks

05   tsp   salt

1.5  tbs   Dried yeast

1.5  tbs   oil

7 - 10 dl  warm water

In a large bowl add all your dry ingredients including the cauliflower and add the oil and water. Add half the water and mix and keep adding until you  have a soft and a bit sticky dough. Knead for about 3 mins till the dough becomes a bit more elastic then put back in the bowl and cover. Leave until it has doubled in size.

Knead the dough again on a floured surface till you have knocked out all the air. Then divide into two loaves. Put on a baking sheet and brush with a bit of oil and leave to rise again for about 30 mins. When ready put in a pre heated oven and bake till golden brown and sounds hollow when you tap the bottom of the bread. 

Leave to cool and then enjoy!
