Semolina and spelt bread

Every Thursday i bake for lunch, last week i found i had semolina and decided to try it in the bread. it worked out really well, made a soft bread with a cruchy crust. The children loved it so here is the recipe. Hope you like it to.

Makes 3 large loaves

1 kg        Semolina

1 kg        Spelt Flour

750 gr     Plain Flour

1/5 tbs    Salt

1 tbs        Sugar

3/5 tbs    Dries yeast

12 dl        warm water

Oven temp 200C

In a small bowl add the yeast and sugar pour over 1 dl warm water and leave for about 10 minutes.  in a large mixing bowl add the semolina, spelt flour and plain flour. add the yeast mixture, water and salt. mix till you have a soft and slightly sticky dough. knead the dough by hand or in a kitchen machine for about 5 mins. Put the dough in a large bowl and cover with plastic.

Leave the dough to rise for about 40 mins. when doubled in size turn out the bowl and knead again till you have a smooth dough. divide the dough into 3, roll each part into a fat sausage shape and place on a baking tray. cover the bread with plastic again. When it has risen again take off the platic and brush the top of the loaves with some water and place in a pre heated oven, at 200C. it should take about 15 min to cook but check, if you tap the base and it sounds hollow it is ready. Leave to cool and enjoy.

leave to rise for about another 20 mins.
