The absolute favourite is Carrot and Sweetpotato soup. Very easy to make and a great way to get your children to eat vegetables. Both carrots and sweet potato are as the name suggests sweet. So this is a great soup to get your children to try soups and something new. You can also add normal potatos or pumpkin. so you have one basic soup that can become many different types.

500gr Carrots washed and sliced
500gr Sweet potatoes peeled and sliced
1 Onion roughly chopped
2 Celery sticks chopped
2 tbs sunflower oil
1.5 lt chicken stock or vegetable stock
salt and pepper

5 kg Carrots washed and sliced
5 kg sweet potatoes peeled and sliced
1 kg Onions sliced
2 head celery roughly chopped
1 dl sunflower oil
18 lt chicken stock or vegetable stock
salt and pepper
in a large pan heat the oil, add the sliced onions and chopped celery. cook on a meduim heat till soft. Then add the chopped carrots and sweet potato. cook with the lid on for about 3 minutes then add the stock and season with salt and pepper. Bring the soup to a boil then lower to a simmer. cook until all the vegetables are soft.
Puree the soup with hand blender till smooth. taste again and add salt or pepper if needed. Serve with either bread or croutons.
