Pizza is something my family love, as i have had such a problem eating starches i have had to cut pizza out of what i eat and i missed it. I had seen cauliflower pizza recipes all over the internet but as i can't eat to much of it i had to find a bit of an alternative reccipe, so here is the one i use for me when i make pizza for the family.
half a caulifower trimmed but use the leaves and stalk
80 gr almonds
50gr pumpkin seeds
50gr sunflower seeds
50gr walnuts
1 teaspoon pizza herbs
2 eggs
In a kitchen machine add the chopped cauliflower with leaves and stalks. whizz up then add all the nuts and whizz untill they are all chopped up really fine and look like breadcrumbs. tip into a large bowl and and add the eggs and pizza herbs. mix in the eggs till you have a sort of dough.
Cover a oven tray with baking paper, the put the cauliflower mix on the tray and spread out into a pizza base shape, try and make the base as thin as possible.
Bake the base in a pre heated oven set at 200oC till brown and crispy should take about 10-15 minutes. take out and spread over tomato sauce and use what ever topping you would like, then spread over cheese and bake in the oven till all the cheese is melted and it looks super yummy.
